Are you an oatmeal lover like me? <\/p>\n\n\n\n

If so, have you ever tried a baked oatmeal? <\/p>\n\n\n\n

Recently, I saw a recipe in the September issue of Better Homes and Gardens<\/a> magazine for Baked Hummingbird Oatmeal and I had to try it!<\/p>\n\n\n

The recipe is made up of simple ingredients that are not hard to find.<\/p>\n\n\n\n

You probably have many of the ingredients in your pantry already.<\/p>\n\n\n\n

Ingredients you will need for this recipe:<\/h2>\n\n\n\n

2 cups rolled oats<\/p>\n\n\n\n

1\/3 cup brown sugar<\/p>\n\n\n\n

1 tsp baking powder<\/p>\n\n\n\n

1 tsp ground cinnamon<\/p>\n\n\n\n

1\/2 tsp salt<\/p>\n\n\n\n

1 cup milk or nondairy milk<\/p>\n\n\n\n

2 bananas cut up<\/p>\n\n\n\n

2 lightly beaten eggs<\/p>\n\n\n\n

1 cup chopped toasted pecans<\/p>\n\n\n\n

1 cup of pineapple<\/p>\n\n\n\n

flaked or shredded coconut to sprinkle on top<\/p>\n\n\n

One of the ingredients is toasted pecans. If you’ve never toasted your own pecans, it’s really easy to do.<\/p>\n\n\n\n

For one cup of chopped pecans, I melted a tablespoon of butter in the microwave. <\/p>\n\n\n\n

Then I combined the nuts with the butter and added 3\/4 teaspoon of salt. <\/p>\n\n\n\n

Mix these three ingredients well and then spread on a baking sheet and bake in a 325 degree oven for 25 minutes, stirring once at the halfway point.<\/p>\n\n\n\n

Once the pecans are toasted, you’re ready to start the recipe for Baked Hummingbird Oatmeal<\/a>. <\/h3>\n\n\n\n

Blend all of the ingredients together, except the coconut, pineapple, and granulated sugar. <\/p>\n\n\n

After ingredients are mixed well, spoon into four 10-12 ounce baking dishes if you’re going specifically by the recipe. <\/p>\n\n\n\n

I didn’t have any small baking dishes on hand, so I opted for an extra large muffin tin.<\/p>\n\n\n\n

Before putting it in the oven to bake, top each one with coconut. <\/p>\n\n\n\n

Because I made large muffins, I just sprinkled coconut on the tops of each one. <\/p>\n\n\n\n

If you’re going by the Better Homes and Gardens<\/a> recipe, make sure you top each baking dish with 1\/2 cup of coconut.<\/p>\n\n\n

While the oatmeal was baking, I mixed together the pineapple and granulated sugar. <\/p>\n\n\n\n

I didn’t have fresh pineapple on hand, so I used diced pineapple from a can and it still tasted great. <\/p>\n\n\n

The juice from the pineapple and sugar mixture melted into the hot muffin and made it even tastier!<\/p>\n\n\n

Baked Hummingbird Oatmeal is a great alternative to the traditional Hummingbird Cake and is the texture of a spoonable banana bread. <\/p>\n\n\n\n
