Peanut Butter Snowballs

Ingredients

  • 1 lb white chocolate chips
  • 1/2 cup creamy peanut butter
  • 1 cup confectionerssugar
  • 3 tbsp butter softened

Instructions

  • In a medium size bowl, combine the peanut butter, sugar, andbutter and mix well.
    Shape the mixture into about 1" balls and place on parchment paper lined cookie sheet.
    Chill in the refrigerator for 30 minutes or until firm.
    Melt the chocolate in the microwave until smooth.
    It depends on your microwave, but mine took about 3 minutes, stirring halfway in between.
    Dip the balls one at a time into the chocolate mixture, being careful to coat completely.
    Transfer with a fork or spoon to parchment lined cookie sheet and allow to harden.
